Recipe: Thai Duck Red Curry with Pineapple and Cherry Tomatoes / Kaeng Phed Ped Yang 🦆

Updated after making it. Excellent, duck came out very tender. Timing on the duck breasts depends the level of low-medium heat you cook it on. I augmented the red curry with tamarind, lime and fish sauce ...

Red curry:
1.5 tbsp red curry paste (I used Mae Ploy brand)
1 can of coconut milk.
1 tbsp tamarind paste
2 tsp fish sauce
2 tsp brown / palm sugar
Juice of 0.5 limes
Mild peppers / 0.5 red bell pepper
Kaffir lime leaves, optional

Pan-fried separately, per the link
2 duck breasts skin on
6 cherry tomatoes.
200 g of pineapple chunks (ideally fresh)

Now wild garlic is not an authentic Thai ingredient but this was delicious and full of vegetables. I used no other garlic only wild garlic ...

Chicken and marinade:
300g minced chicken
Marinade in 1 tbsp light soy and (optional) 0.5 tbsp golden mountain sauce

Stir fry:
2 handfuls of wild garlic (leaves, and stems chopped into 2cm pieces, I omitted the flowers)
1 birds-eye chili, fresh
A handful of beansprouts
1-2 tablespoons of fish sauce (salty, so to taste)
1 tablespoons of light soy sauce
2 tablespoons oyster sauce
1 teaspoon of palm sugar
1 finely sliced onion
3 spring onions, green parts only, chopped into 2cm pieces
1 cup of Thai basil (or regular basil)
Vegetable oil

300 g chicken breast or thigh, cut into 1-cm thick slices
8 cloves garlic, chopped
1 Tbsp oyster sauce
1 Tbsp soy sauce
1 tsp Golden Mountain sauce (or substitute regular soy sauce)
1 tsp fish sauce
Black soy sauce, as needed for colour, about 1 tsp
1.5 tsp sugar
0.25 tsp ground white pepper
0.25 tsp ground black pepper
7-8 coriander stems, chopped
Water, as needed
